Now I know you're probably thinking crispy potato or kumara chips, but what I mean by 'healthy chips' is vegetables cut into long chip shapes, and coated in egg and breadcrumbs, then cooking in the oven to make 'chips'. Now it may sound easy, and that's because it is. This recipe is great if you have some leftover vegetables in your fridge waiting to be used, but just cooking asparagus and eating that alone doesn't sound that satisfying. Here are a few vegetables I love to use to make vegetable fries:
Courgette/Zucchini
Egg Plant
Capsicum
Asparagus
ect.
If you are using one of these or any other vegetables of your choice I have popped the recipe down below showing you how easy it really is to get those vegetable sitting in your fridge gone, whilst still making them taste delicious .
Ingredients:
1 vegetable (if you are using more vegetables just add more egg and crumb as you go)
1 egg
1 cup breadcrumbs
Method:
1. Cut veges into chip size pieces (about finger width & length)
2. Whisk egg and coat over veges
3. Coat veges in breadcrumbs
4. Lay down baking paper or coat tray in oil
5. Cook on 200 degrees for 15-20 minutes or until golden brown
