This recipe does involve having a food processor with a stainless steel chopping blade and grater blade. If you do not have a food processor you will need to purchase minced chicken breast and you’ll need a grater. Will probably alter this recipe every now and again but this is pretty much a base. Feel free to add in some cheese, veggies other spices and herbs or even substitute the chicken for normal beef mince. It’s all up to you.
Ingredients:
2 small chicken breasts or 450g of minced chicken
½ carrot peeled and grated
½ courgette grated
1 tsp chicken salt (I just shake it on everywhere)
1 tsp pepper
2 or 3 sheets of flaky puff pastry (depending on how much your batch is in the end)
Dash of milk or 1 egg to coat your pastry
Method: (without a food processor)
Instead of using a food processor to grate your veggies do it by hand with a grater.
Then add your grated veggies and pre-minced chicken into a mixing bowl and carry on with the 6th step in the method below.
Method: (with a food processor)
Grate your carrot and courgette in your food processor using the grating piece
Scrape your vegetable into a large mixing bowl on the side (big enough to later fit your chicken in with it)
Start cutting your chicken breast into smaller pieces (about 10 pieces per chicken breast)
Place your chopped chicken into the blender using the stainless steel chopping blade to mince your chicken.
Scrape your chicken into the bowl with your veggies
Season to your taste buds (I just do sprinkle of each and it’s usually a different amount every time)
Bring your pastry sheets out of the freezer as they don’t take very long to defrost and lay them on a flat/clean surface in front of you
Whilst they are starting to defrost grab your oven dish and oil it
Start preheating your oven to 200° Celcius
In your mixing bowl separate your sausage mix evenly in half or thirds depending on how big your batch ended up being (mine alternates between 2 or 3 most times)
Use the diagram and video at the bottom of this page to help you create and roll your sausage roll:
Once your chicken sausage roll is nicely rolled place it into your oven dish
Using a fork stab your roll about 6 times evenly spaced along the length of the roll
In a ramekin or cup pour in a bit of milk or crack and whisk an egg and brush this all over your pastry
Then pop in the oven for about 25-35 mins or until golden brown
Extra delicious with your favourite sauce
